Started in 2022 by Octavio Ortega (Mexicuban, TGA Hood & Fire Suppression). Fulfilling his desires to bring Latin fusion flavors to his love of wood fired pizza with exciting collaborations of Cochinita Pibil Slow roasted pork, plantains, red onions, cotija cheese with a habanero crema sauce. Ortega’s childhood had him growing up in the Veracruz region of Mexico. Ortega loves to meld his roots with Caribbean cuisine, his stepdad being Cuban and introducing him to the wonderful tapestry of flavors that Cuba has to offer with a pizza called Havana with Cuban roast pork, banana peppers, dill pickles, red onion, Mozzarella cheese with a chipotle sauce base.
Also staying true to the roots that wood fired pizza has represented for hundreds of years we still make all the classic pies, Cheese, Pepperoni and Margherita. Candela proves to be more and more an experience in experimenting what flavors we can really do on some wood fired dough.
Candela will be all over the Northwest this summer from your favorite local brewery to Marymoor summer series, summer festivals to private events.
